Spicy Chickpea Bowl
Protein-rich plant-based bowl with spicy roasted chickpeas and fresh greens.
- 1 can chickpeas, drained and rinsed
- 1 tbsp olive oil
- 1 tsp paprika
- ½ tsp cumin
- ¼ tsp chili powder
- 1 cup cooked brown rice
- 1 cup mixed greens
- ½ avocado, sliced
- Lemon wedge for serving
- Preheat oven to 200°C / 400°F.
- Toss chickpeas with olive oil, paprika, cumin, chili powder.
- Roast 20 minutes until crispy.
- Assemble bowls: rice base, add greens, avocado, roasted chickpeas.
- Squeeze lemon juice over top and serve.
- Swap rice with quinoa or couscous.
- Add roasted vegetables for more flavor.
