Spicy Chickpea Bowl

Protein-rich plant-based bowl with spicy roasted chickpeas and fresh greens.

  • 1 can chickpeas, drained and rinsed
  • 1 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp cumin
  • ¼ tsp chili powder
  • 1 cup cooked brown rice
  • 1 cup mixed greens
  • ½ avocado, sliced
  • Lemon wedge for serving
  1. Preheat oven to 200°C / 400°F.
  2. Toss chickpeas with olive oil, paprika, cumin, chili powder.
  3. Roast 20 minutes until crispy.
  4. Assemble bowls: rice base, add greens, avocado, roasted chickpeas.
  5. Squeeze lemon juice over top and serve.
  • Swap rice with quinoa or couscous.
  • Add roasted vegetables for more flavor.
