Mediterranean Quinoa Salad

Fresh vegetables and quinoa tossed in a zesty lemon herb dressing.

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ cup Kalamata olives, sliced
  • ¼ cup feta cheese, crumbled
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • Salt, pepper, dried oregano to taste
  1. Cook quinoa in water, fluff with a fork, let cool.
  2. In a bowl, combine tomatoes, cucumber, olives, feta.
  3. Mix quinoa into vegetables.
  4. Whisk olive oil, lemon juice, salt, pepper, oregano; pour over salad.
  5. Toss gently and serve chilled.
  • Add roasted chickpeas for extra protein.
  • Replace feta with goat cheese if desired.
