Mediterranean Quinoa Salad
Fresh vegetables and quinoa tossed in a zesty lemon herb dressing.
- 1 cup quinoa, rinsed
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ½ cup Kalamata olives, sliced
- ¼ cup feta cheese, crumbled
- 2 tbsp olive oil
- Juice of 1 lemon
- Salt, pepper, dried oregano to taste
- Cook quinoa in water, fluff with a fork, let cool.
- In a bowl, combine tomatoes, cucumber, olives, feta.
- Mix quinoa into vegetables.
- Whisk olive oil, lemon juice, salt, pepper, oregano; pour over salad.
- Toss gently and serve chilled.
- Add roasted chickpeas for extra protein.
- Replace feta with goat cheese if desired.
