Classic Tomato Soup
Rich, comforting, homemade tomato soup.
- 6 large tomatoes, chopped
- 1 onion, diced
- 2 garlic cloves, minced
- 2 cups vegetable broth
- 1 tbsp olive oil
- Salt, pepper, sugar to taste
- Fresh basil for garnish
- Heat olive oil; sauté onion and garlic until soft.
- Add tomatoes; cook 5–7 minutes.
- Add broth; simmer 15 minutes.
- Blend soup until smooth; season with salt, pepper, sugar.
- Serve garnished with basil.
- Add cream for creamy tomato soup.
- Serve with grilled cheese sandwiches.
