Classic Tomato Soup

Rich, comforting, homemade tomato soup.

  • 6 large tomatoes, chopped
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 cups vegetable broth
  • 1 tbsp olive oil
  • Salt, pepper, sugar to taste
  • Fresh basil for garnish
  1. Heat olive oil; sauté onion and garlic until soft.
  2. Add tomatoes; cook 5–7 minutes.
  3. Add broth; simmer 15 minutes.
  4. Blend soup until smooth; season with salt, pepper, sugar.
  5. Serve garnished with basil.
  • Add cream for creamy tomato soup.
  • Serve with grilled cheese sandwiches.
